Nut and Date Balls

Sometimes you just need a quick little sweet treat, and this is it.

Yield: 12 to 18 balls

2 cups (500 mL) raw walnuts or pecans
1 cup (250 mL) pitted medjool dates
⅓ cup (80 mL) organic cocoa
1 tablespoon (15 mL) raw cacoa nibs (optional)
Unsweetened coconut

Put the nuts, dates, and cocoa in a food processor with an S blade and process until well blended. Transfer the mixture to a bowl and stir in cacoa nibs. Spread the coconut on a plate and scoop the mixture into balls and roll them in the coconut. Chill before serving.

Variation:  you can replace the cocoa with unsweetened coconut flakes and grated lemon rind.
