Green Tomato Cake
My version of a recipe my mom shared with me.
21/2 cups whole spelt flour or your favorite gluten free flour mixture (I like Molly B’s)
2 tsp. baking soda
1 tsp cinnamon
1 tsp cloves
½ tsp salt
½ cup chopped walnuts or pecans (optional)
1 cup coconut oil
1 cup coconut sugar
3 eggs
2 tsp. vanilla
3 cups grated green tomatoes
Preheat oven to 350 degrees. Lightly oil bundt pan.
In a medium sized bowl, mix dry ingredients together to combine. In a larger bowl, blend oil, sugar, eggs, and vanilla. Stir in tomatoes.
Spoon batter into pan and bake for one hour.
Variation: you could also make these into muffins just bake them for about 20 minutes.
