Creamy Cashew Lemon Dressing

1/2 cup raw cashews, soaked for 4 hours and drained

1/2 cup water
3-4 tablespoons fresh lemon juice
2 tablespoons nutritional yeast (optional)
2 tablespoons extra virgin olive or avocado oil
1/4 cup fresh dill
1/2 small garlic clove
1/4 + 1/8 teaspoon fine grain sea salt, or to taste

Blend all dressing ingredients until smooth.

Makes about 1 1/2 cups.
