Here’s a recipe from one of my dear friends and sources of inspiration, Pam Koekebakker.
Spinach Frittata
1 onion, halved and thinly sliced
1 tbsp ghee or olive oil
1 tsp maple syrup
In large iron or other heavy skillet, heat oil over medium heat. Add onions and syrup and cook, stirring, for 5 minutes. Reduce heat to low and cook slowly for 15 minutes or until caramelized (golden brown appearance).
10 eggs
salt and pepper to taste
1 package organic baby spinach, rinsed
1 package soft goat cheese
2 tomatoes, sliced
Preheat oven to 400 degrees.
In large bowl, whisk eggs and season with salt and pepper. When onions are ready, remove from heat and pour half of egg mixture over onions. Place spinach over egg and then cover with remaining eggs. Top with cheese chunks and tomato slices. Bake for about 20 minutes or until eggs are set.
Serves 4-6.
