Quinoa Burgers

Quinoa Burgers

If you use the red quinoa, they will look more like regular burgers.

2 cups cooked Quinoa

1 small onion, finely diced

1 carrot, grated

1 celery stalk, finely diced

1/2 cup mushrooms, finely chopped

1 clove garlic minced

1 tbsp Italian seasoning

1/2 cup bread crumbs

1 egg, beaten

1 tbsp olive oil

Mix above ingredients, add salt and pepper to taste. Form burger with wet hands (patties are about 4 inches in diameter and ½ inch thick).

Heat oil in frying pan over medium heat. Add patties and cook about 5 minutes each side until golden brown. Serve on an Eziekiel bun with a green salad.

Makes 4 patties.
