Meatless Monday Recipe – Brown Rice Pasta with Fresh Tomato Sauce
Fresh tomotoes are now readily available and this simple recipe makes for a quick dinner. Serve with an avocado salad.
1 tbsp olive oil
1 large onion, diced
2 cloves garlic, finely chopped
1 lb roma tomatoes, coarsely chopped
1 tbsp red wine vinegar
2 tbsp fresh oregano
1 tbsp fresh basil
salt and pepper to taste
1 lb. brown rice or other non wheat pasta
Grated parmesan cheese
In skillet, heat olive oil over medium heat. Add onion and garlic and sauté until onion is limp. Add remaining ingredients and simmer for about 20 minutes. Adjust seasonings. Makes 2 cups.
Cook rice according to directions.
Toss sauce with cooked brown rice or other non-wheat pasta and garnish with parmesan cheese.
