Colourful Bean Casserole

My niece Sarah and I created this recipe together in less than 30 minutes.

2 large white potatoes, peeled and diced into 1 inch cubes

2 large sweet potatoes, peeled and diced into 1 inch cubes

1 tsp. paprika

salt and pepper

Place in saucepan with water, bring to boil and simmer until tender.

1 tbsp extra virgin olive oil

1 medium onion, peeled and diced

1 clove garlic, minced

1 sweet pepper, cored and diced

1 small zucchini, diced or one head broccoli, chopped

1 19 oz can romano beans, drained and rinsed

1 tsp. dried oregano

two thirds cup tomato sauce or gravy

salt and pepper to taste

one half cup grated cheese or breadcrumbs

In large frying pan, heat oil over medium heat and add onions. Cook for two minutes then still in other vegetables and continue cooking for another 2 minutes.

Add beans, seasoning and sauce and stir until heated through, about 2 more minutes.

In the meantime, drain and mash potatoes with seasonings.

Place vegetable and bean mixture into casserole. Spread potatoes over top. Sprinkle with cheese and place under broiler until cheese melts.

Serves 4-6.
