Gluten Free Brownies
Gluten Free Brownies
This recipe is adapted from one found on the Kirkland almond flour package. It can easily be made vegan and is just as delicious.
2 tbsp. butter or coconut oil, softened
1/2 cup cane sugar
1 egg
1/4 cup milk or milk substitute
1 tsp. vanilla extract
1/4 cup unsweetened organic cocoa powder
1 tsp GF baking powder
1/4 cup slivered almonds or other chopped nuts
1/4 cup unsweetened coconut flakes
1/4 cup dark chocolate chips
pinch sea salt
Preheat oven to 350 degrees.
Cream together butter/oil and sugar in a large mixing bowl. Blend in egg, milk, and vanilla.
In another smaller bowl, whisk together almond flour, cocoa powder, baking powder, salt. Add to butter mixture and blend till mixed. Stir in nuts/coconut/chocolate chips.
Bake for 30-35 minutes. Let cool before serving.
Garnish with fresh berries, lemon curd, sweetened yogurt or whipped cream.
To make this recipe vegan, use coconut oil, a flax/chia “egg”*, and milk substitute. Chocolate chips need to also be vegan (no dairy ingredients).
To make an egg replacement, take 1 tbsp ground flax or chia and mix it with 3 tbsp warm water. Let sit for a couple of minutes until gelatinous.
